Recipes | Eco beef tartare with quail eggs
Ingredients for 4 servings: |

400 g beef sirloin |
8 quail eggs |
2 onions |
2 pickled cucumbers |
salt |
pepper |
sprinkle of olive oil |
Preparation:
Clean the meat; wash, dry and cut into small pieces with a knife. Season to taste with salt and pepper. Form small patties out of the meat mass. Sprinkle with olive oil. Place chopped onions next to the meat, add mushrooms and pickled cucumbers. You can also serve the tartare with chopped anchovies, capers, olives cut into quarters, finely chopped peppers.
