Organic chicken legs with eco-bacon roasted with organic vegetables
Ingredients for 4 servings: |
4 chicken legs |
8 thin slices smoked bacon |
1/2 head of cabbage |
3 carrots |
white portion of a leek |
1 large onion |
1/4 celery root |
6 mushrooms |
Seasoning – salt, pepper, a teaspoon of thyme, marjoram, a large pinch of lovage, ground sweet and hot paprika |
Preparation:
Cut the chicken legs in 2 parts, season and refrigerate for at least 1 hour.
Wrap each piece of meat in a slice of bacon and place in a baking dish. Put into an oven preheated to 200°C (390°F). After 20 minutes, baste the meat with the resulting sauce or, if there is not enough, use half a glass of chicken stock or plain water. Cut the vegetables into large cubes and mix in a bowl with a pinch of hot paprika and a teaspoon of sweet paprika. After 20 minutes, baste the meat with the sauce again and place the vegetables round the edge of the dish. Roast everything for approx. 20-30 minutes.
